I was having lunch with Dawn at P.F. Changs and started reminiscing about a pineapple flavored martini I had at, as luck would have it, P.F. Changs back home. I realized that Firebirds also has a pineapple martini that I loved but at $9 a pop, it's an expensive habit to indulge. I searched for a simple and easy recipe to bring to a get together and found the following. Just to warn you, half of the attendees started gasping for air as soon as the liquor hit their throat because they thought it was strong. The other half thought it tasted good but maybe we're just lushes.
Upside Down Pineapple Cake Martini
2 parts chilled pineapple juice
1 part vanilla flavored vodka
Dash of grenadine
Shake pineapple juice and vanilla vodka with ice in a tumbler. Pour into a martini cocktail glass. Add dash of grenadine, and serve.*
* To make it an Easy Peasy recipe, eliminate the grenadine and don't worry with the tumbler. To make it fancy schmancy, garnish with fresh pineapple chunks.
